If you have ever read my blog, you know that I am against waste. I have gone over how I feel when I watch home improvement shows and they go in and start smashing everything. Even things that could be saved and donated or even sold instead of ending up in our landfills. But the truth … Continue reading When Did We Start To Waste So Much? About my computer…the two people who are supposed to be working on setting it up for me (first they have to LEARN about the new programs, set it up for me specifically and then trouble shoot ALL of the problems that I find and try to figure out how to fix the problems) are going on vacation for 2 weeks! Soooooooo my new computer that was supposed to be ready for February is hopefully going to be ready in…April? Maybe?!
Oh well, happy cooking!
I introduce you to Bill, another PALS (people living with ALS) and wish you all a Merry Christmas and only the best for the New Year! God bless! xo
On the last day of 2016, I was rushed to the hospital in an ambulance because, even with my breathing mask on, I couldn’t breathe. The doctors diagnosed me with an Upper Respiratory Infection. I didn’t think I would live to see the first day of 2017. I thought the last hours of 2016 would be the last hours of my life.
Obviously, I didn’t die. By God’s grace I lived to see another year. Every day of 2017 has been like a bonus to me, every day God gives me is a bonus. People with ALS are not supposed to live for 21 years. I hope that God will let me hang around for 2018.
I wasn’t planning on posting again this year, but I was sitting here and thought I’d type a short post to wish my blog followers a Merry Christmas and a Happy New Year!

I draw the line on my beloved Mediterranean food … Continue reading Pork Souvlaki And Home-Made Tzatziki

In this life, I have had plenty of time to think about what is important. When you have a body that doesn't work, no voice and years of being stuck in a sort of bubble, trust me when I say that you spend a great deal of time in your mind. Scary, I know! The … Continue reading The Important Things
This is a quick and easy dish that is made for days where the time seems to disappear before your eyes. I would whip this up when I wanted something healthy but I didn't want to spend a lot of time at the stove. I would serve it with a salad. Ingredients: 1 can of … Continue reading Tuna Casserole
