This apple pie looks super easy to throw together and no crust to fuss with! I think that I would use Greek yogurt to add extra protein so I didn’t feel guilty when I ate the whole thing! hahahaha
Seriously, I think that if I woke up tomorrow morning completely healed from ALS I would go from a 5’8″ skeleton to a 5’8″ 600lbs person! lol

I will admit that apple pies are one of those baked goods that I like to bake the most. Although what not to like about apple pie? Preparation is always super fast, just have apples, flour, eggs, sugar, extra sour cream or yogurt, and voila – a pie is already on the table. Plus, apple pies are always delicious both hot and cold. And if you are lucky and have some remaining ice cream in your freezer, then you can get a fabulous dessert, without much effort and waiting time…

This cake will be loved especially by those who don’t like dry pies, but adore moist and juicy baked goods. You can always use Greek yogurt instead of natural yogurt, or if you want to use sweet yogurt, then add less sugar in a dough.

Healthy Eating…Cauliflower Rice

I’ve heard about and read a number of blogs where they all insist that cauliflower rice is the best thing BUT until Carol posted this, I was not convinced. Carol, I trust YOU so I pass this on to my followers!
My computer…well, it will come when it comes. Now we are trying a different one so I don’t know what to tell you. It’s just not happening as quickly as I was told.

My recipe tried and tested and it’s  awesome………. Cauliflower Rice.

And all you need is a Cauliflower and an Onion.

A little Coconut oil to cook or other oil of your choice.

Sea Salt and a squeeze Lemon Juice.

Either grate or blitz in a food processor ( but not too fine) you want some texture.

Heat pan and keep pan HOT as you don’t want Cauliflower to steam and go soggy.

Use Tablespoon Coconut Oil and put in the desired amount of Cauliflower and onion mix.

Cook quickly and then season and add lemon juice.

All in all, it only takes a few minutes to cook….. a bit longer if more than one portion but keep pan hot.

If you wish to vary the taste you can add 1 tsp of Cumin seeds to oil before adding Cauliflower if you are eating…

Cheeseburger Soup

This soup sounds like one that my Mom would have loved. Mom LOVED hamburgers! And this soup sounds like a hamburger in a bowl!

Who doesn’t love a good cheeseburger? It’s about as American as apple pie. Then there’s this soup. It’s warm, creamy, comforting and totally reminiscent of a good cheeseburger. I made this soup for dinner the other night and it was a big hit. Bill didn’t seem overly excited about it until he had a bowl…or two. Needless to say, the whole pot went quickly. I guess he liked it.

What makes this soup so good is the creamy base. It gives the soup it’s heartiness and makes for a very filling dinner. It’s a great soup to make on a cold night. It’s pretty simple to put together and the optional toppings makes it that much more tasty, letting you customize it individually. This was the first time I had made this soup for dinner and it definitely won’t be the last.
