When I was a child, my mom and dad moved us from Ottawa, Ontario to Dartmouth, Nova Scotia. I guess technically it was my step-father but to me, at that time in life he was the only dad I knew. It was not until the age of 15 that I met my real father. That … Continue reading A Story and A Slow Cooker Recipe To Beat The Summer Heat

Turkey Meatballs with Spinach and Sundried Tomatoes
These look so good that I just had to share it with you! I apologize for my disappearing act but I’m kinda going through a slight hell right now. I am lowering the dose of my Fentanol patch in preparation for my going on Medical Cannabis. I didn’t want to go through withdrawal and an increase of pain while starting a new pain medication. I would not of known what was doing what. So give me a week or two and I will be back to fighting shape! Oh and go make these meatballs – you can find my recipe for tzatziki if you enter pork souvlaki in the search field – and tell me how good they are, k?! xo
Let me start by saying these smelled so good while they were cooking lol…. enough so that I took my chances and had a few myself with dinner!
I had some spinach still frozen and some sundried tomatoes in the fridge from when I made my Tuscan Garlic Chicken last week and thought these would be a great addition to ground turkey to make some meatballs for dinner.
These were so good that I didn’t even add a sauce to them when they were cooking, I just piped some tzatziki sauce on them right before serving!

Sandie
These are the ingredients I used to make the meatballs.

I added ALL of the ingredients to a large mixing bowl…..

And mixed by fork and by hand until it was very well blended, before shaping the mixture into the meatballs. I made mine about 1 1/2 inches round.

I baked the meatballs…

Nanny’s Spaghetti Sauce And Her Secret Ingredient!
I wish I had a picture of my Nanny standing at the stove, her trusted big spaghetti pot in front of her - you know the one that all grandmothers seem to have just for the big stuff like spaghetti sauce or soup - stirring the sauce. She would have been in one of her … Continue reading Nanny’s Spaghetti Sauce And Her Secret Ingredient!
Cinnamon Raisin French Toast Casserole
This casserole looks too good to be true! It’s heavenly and you do not have to stand in front of a stove making one or two pieces of French Toast at a time. You can prep it all the night before and then pop it in the oven the next morning! Heaven and no prep time the day of!
I’m a huge fan of French Toast, or at least I was and I have to admit that if I had known that you could make it soooooo easily, I may have had a few extra pounds on my bum! lol I know a certain niece who loves raisin bread and I’m going to guess that she would love this casserole.
Happy cooking!
Simply Made Kitchen and Crafts
Not far from our home, there is a Pepperidge Farm Outlet that we often visit when going to a nearby mall. One of the items I usually stock up on is the cinnamon raisin bread that is always marked down to a reasonable price. I bring the loaves home and tuck them in the freezer for lots of different recipes.
This is a tasty casserole that takes minutes to put together. It’s such a treat to put a big pan of French toast in the oven rather than standing in front of the stovetop making slices in small batches. This makes for more time to enjoy early morning conversation with the family while savoring the awesome combination of cinnamon, raisin, pecans and maple syrup with a piping hot cup of coffee. I often make this the night before serving so that when I wake up there is no prep time…

Swedish Meatballs
I always loved Swedish Meatballs when I could eat solid food! I don’t know what Ikea is like outside of Canada but here they have a little restaurant in the middle of their maze, a food cart like area after the cashiers and a place where you can buy frozen foods or pantry items.
If you can resist the quick and cheap hotdogs and drink – come on, you know you love them – try their Swedish Meatballs. I was surprised by how good they were! I even bought them from their frozen section.
That was me being lazy! I think that this recipe looks really easy and delicious.
Happy cooking!
It’s the best one I’ve tried yet- to date. I normally wouldn’t try this with pork, because I’m not a huge pork fan…but I decided to give it a go. I was so shocked at how good it is! I’ll definitely be keeping this recipe.
I’ve been sitting here waiting for the kid to get home. He’s really not going to be happy with me. The reason why is because he has to clean his bedroom and the game room. In addition he has to pick his clothes up out of the floor in the bathroom. It makes me laugh because he gets all cranky and whinny. He asks every single week, multiple times to get paid for chores, but we keep telling him no. First off, there are things he’s required to do, because it’s his space. I wont pay him to clean his…

Yesterday my computer almost bit the dust AND the person this hospital hired to cover the 2 people who normally work with patients who use computers to communicate – so basically their lifeline – KNOWS NOTHING ABOUT COMPUTERS! Wuhaaaaa?! Thankfully, I was able to get my lifeline working with the help of a very patient nurse!
Oh well, life continues at St. Vincent’s Hospital…

Salami Frittata
This frittata looks delicious! It would be great for brunch or just a nice breakfast with the kiddos.
About my computer…the two people who are supposed to be working on setting it up for me (first they have to LEARN about the new programs, set it up for me specifically and then trouble shoot ALL of the problems that I find and try to figure out how to fix the problems) are going on vacation for 2 weeks! Soooooooo my new computer that was supposed to be ready for February is hopefully going to be ready in…April? Maybe?!
Oh well, happy cooking!
Cheeseburger Soup
This soup sounds like one that my Mom would have loved. Mom LOVED hamburgers! And this soup sounds like a hamburger in a bowl!
In other news, my computer, the new one that is, has been delayed. Which means that the return of me writing posts is delayed…
Sorry!
Happy cooking!
Who doesn’t love a good cheeseburger? It’s about as American as apple pie. Then there’s this soup. It’s warm, creamy, comforting and totally reminiscent of a good cheeseburger. I made this soup for dinner the other night and it was a big hit. Bill didn’t seem overly excited about it until he had a bowl…or two. Needless to say, the whole pot went quickly. I guess he liked it.
What makes this soup so good is the creamy base. It gives the soup it’s heartiness and makes for a very filling dinner. It’s a great soup to make on a cold night. It’s pretty simple to put together and the optional toppings makes it that much more tasty, letting you customize it individually. This was the first time I had made this soup for dinner and it definitely won’t be the last.

Dad’s Meatloaf
I loved me a good meatloaf! What I really like about this recipe is that they use rolled oats instead of bread or breadcrumbs. I was never a fan of ever getting a piece of soggy bread in my mouth. Ewwwwwwwwww!
On my new computer side of things, I have seen the machine twice! Woohoo! The OT’s are working to download the proper programs and then there will be a few weeks of me working with the OT’s to make sure it’s running properly and then I’ll be off and running!
Guys, that means that I will finally be able to make posts again! Though I think that I will continue to reblog posts by my blogging friends.
Happy cooking!
Adventures of a Food allergy dad
Ultimate comfort food, made safe!
Well, it’s here. The middle of winter in the Midwestern. For those of you not familiar with the Midwestern United States, I’ll explain. At this time of year, there are basically two different types of weather: ridiculously cold and snowy, or sort of cold with dreary, drizzly rain. We’ll have beautiful sunny skies but instant frostbite, or steel grey skies with nonstop misty rain that makes it impossible to dial in your windshield wipers and has everyone self-diagnosing as having Seasonal Affective Disorder. I love the first big snowfall of the season, but after that, winter can just go somewhere else. So in this bleak season when the skies are the color of granite and the cold unrelentingly grips your toes, I feel the need for good comfort food. And in my mind, there are few better comfort foods than meatloaf.
The only meatloaf…
