I have been putting writing this post off for quite some time now. It has not been anything other than pure laziness in my case. I could tell you that my computer has been giving me trouble, which it has but that is not the true reason. I could tell you that I have been … Continue reading Random Thoughts And Other Things – 8
This past weekend was Canada Day! Yahoo Canada! For those of you who don't know when we Canucks celebrate our Country, it's July 1st. Every year. Not the 4th, the 1st! I watched many of the blogs that I follow to see if any of them would present a Canadian celebration menu. You know with … Continue reading Mmmmm-mmmm, Aunt Paul’s Lemon Loaf With Sweet Drizzle!
Man, I have been in a funk lately! I have re-read my last few posts and I was being someone special, wasn't I? And not a good special either! Well, no more of that negativity! I'm trying to get my positive attitude back. I hope that if I keep telling myself to look on the … Continue reading My Favourite Kind Of Recipe! – No Churn Ice Cream!
It's been awhile has it not? I mean for me to post a Random Thoughts post. Well, I have some thoughts to share! I always have something I want to say but I am silent because of my ALS. I really wish that I could talk to my visitors but I do love to listen … Continue reading Random Thoughts And Other Things – 7
I literally have nothing! I have been sick for the last two weeks or so with not one but TWO different infections one after another. And I am tired guys! I don't have my usual good outlook on my life, living with ALS and all. So, instead of passing my poor me attitude onto you … Continue reading I’ve Got Nothing… And Cousin Shawn’s Risotto Recipe
Man, I have to tell you that after being gone from my blog it sure is hard getting back into it. If you add in my health issues, you certainly have a recipe for disaster! Okay, I know that you are all still out there. I was the one to disappear! I know, but it was not my fault I promise you. It was my computer that sort of died. Ohhh, it would let me do some things. It would still talk for me, still let me read my naughty … Continue reading Test, Test… Is Anyone Out There?
This frittata looks delicious! It would be great for brunch or just a nice breakfast with the kiddos.
About my computer…the two people who are supposed to be working on setting it up for me (first they have to LEARN about the new programs, set it up for me specifically and then trouble shoot ALL of the problems that I find and try to figure out how to fix the problems) are going on vacation for 2 weeks! Soooooooo my new computer that was supposed to be ready for February is hopefully going to be ready in…April? Maybe?!
Oh well, happy cooking!
This apple pie looks super easy to throw together and no crust to fuss with! I think that I would use Greek yogurt to add extra protein so I didn’t feel guilty when I ate the whole thing! hahahaha
Seriously, I think that if I woke up tomorrow morning completely healed from ALS I would go from a 5’8″ skeleton to a 5’8″ 600lbs person! lol
I will admit that apple pies are one of those baked goods that I like to bake the most. Although what not to like about apple pie? Preparation is always super fast, just have apples, flour, eggs, sugar, extra sour cream or yogurt, and voila – a pie is already on the table. Plus, apple pies are always delicious both hot and cold. And if you are lucky and have some remaining ice cream in your freezer, then you can get a fabulous dessert, without much effort and waiting time…
This cake will be loved especially by those who don’t like dry pies, but adore moist and juicy baked goods. You can always use Greek yogurt instead of natural yogurt, or if you want to use sweet yogurt, then add less sugar in a dough.
Enjoy your pie! 😉

I introduce you to Bill, another PALS (people living with ALS) and wish you all a Merry Christmas and only the best for the New Year! God bless! xo
On the last day of 2016, I was rushed to the hospital in an ambulance because, even with my breathing mask on, I couldn’t breathe. The doctors diagnosed me with an Upper Respiratory Infection. I didn’t think I would live to see the first day of 2017. I thought the last hours of 2016 would be the last hours of my life.
Obviously, I didn’t die. By God’s grace I lived to see another year. Every day of 2017 has been like a bonus to me, every day God gives me is a bonus. People with ALS are not supposed to live for 21 years. I hope that God will let me hang around for 2018.
I wasn’t planning on posting again this year, but I was sitting here and thought I’d type a short post to wish my blog followers a Merry Christmas and a Happy New Year!
