Spicy Thai Beef & Noodles

I always had a love of both Thai and spicy foods. As my ALS progressed, I lost my ability to eat spicier foods because the heat bothered my throat too much. You don’t have that problem so you can enjoy some heat in your dishes! Of course, you can adjust the heat level so that you enjoy what you are eating. When you are working with hot peppers remember that if you want less heat to remove all of the seeds. The seeds add extra heat.

You are probably wondering why I would post a recipe that might make you sweat when the weather is becoming hot as well. Spicy foods will in fact, help your body temperature even out. Plus, spicy foods and spices get your blood moving, help burn fats (who doesn’t want that right before bikini season?) and help your body purge toxins! Woo-hoo!

I played with this recipe a great deal over the years. I often added more vegetables to the mix and I also made it saucier. Sometimes I added ginger and sometimes I made it with some peanut butter to give it that yummy peanut taste! I stopped using rice sticks and instead would use a package or two of plain rice vermicelli. It was much more cost-effective.


  • 3 ounces of rice stick noodles
  • 2 Tbsp. of oil – I used sunflower, olive or sesame oil
  • 2 large cloves of garlic, minced
  • 1 jalapeno pepper, sliced
  • 6 ounces of top sirloin grilling steak, thinly sliced
  • 1 1/2 cups of green beans, chopped
  • 2/3 cup of bean sprouts
  • 1/4 cup of fresh coriander, chopped
  • 2 Tbsp. of fresh basil, chopped
  • 2 Tbsp. of fish sauce
  • 2 Tbsp. of soy sauce
  • 2 tsp. of lime juice
  • 1 tsp. of sugar
  • salt and pepper, to taste


  1. In a large bowl cover rice sticks with boiling water. Let stand for 20 minutes. Drain.
  2. In a small bowl, combine fish sauce, soy sauce, lime juice, sugar, salt and pepper. Set aside.
  3. In a large skillet or wok, heat oil on medium high heat. Add garlic and jalapeno pepper and cook for ~20 seconds. Add beef and cook until browned but still pink in the centre. Remove from pan and set aside.
  4. Add beans (and any extra vegetables) and cook for ~ 3 minutes.
  5. Add sauce, meat, sprouts and rice noodles. Toss to combine and heat through.
  6. Add coriander and basil. Serve and enjoy!
