Slow Cooker Pot Roast

I always loved to cook! Baking, mmmmmmm…not so much. I was getting more into baking when I was diagnosed with ALS but sadly that never came to fruition. Such is life.

When I would bake, I had to follow a recipe to the letter and even then my cakes were flat and hard. I probably ate too much of the batter! lol

Cooking was entirely different for me. I understood the methods, flavors, techniques and ratios needed to produce something great! I would look in the fridge, see what called to me and create! Because of this, I don’t really have my recipes written down and my spaghetti sauce tasted slightly different every time. To share my recipes with my family, friends and now you, I’ve scoured my memory and looked online for similar recipes that I could add notes to.

This pot roast recipe is a product of my memory. I used whatever beef roast that was cheapest or on sale because it braised all day and always turns out tender!

I use a slow cooker for my pot roasts but you can do it in the oven.
1 beef roast – the cut doesn’t matter
2 onions
baby carrots or carrots peeled and cut into chunks
potatoes – I like using red potatoes washed and cut but not peeled
sometimes I added celery
red wine and/or beef broth
sometimes I added mushrooms

sometimes I added 1 can of whole tomatoes – actually I usually did

  flour
salt and pepper
fresh rosemary and thyme

Season roast with salt and pepper
Lightly flour all sides of the roast
Heat a skillet to medium high heat
Add a light-colored oil or extra virgin olive oil and butter
Sear the roast on all sides
Remove roast from skillet and place in slow cooker
Reduce the heat for the skillet to medium
add more oil
Add onions and minced garlic
Cook until translucent
If using mushrooms add now
Add 2 Tbsp of flour and let cook for a couple of minutes
Add wine and/or broth and let cook for 3 to 5 minutes
In the slow cooker, add potatoes, carrots, tomatoes and celery around the roast
Pour the juices and vegetables over the roast
Cover and cook in slow cooker on low for 6 to eight hours
Oh, I forgot, add herbs before covering and cooking

  1. I know we are so related!!! What you just wrote is so much like me too. Every bread recipe I tried turned into a rock….hahaha!!!! Cooking was another story, and I never seem to duplicate it.😁😉😁 Darlene
