This frittata looks delicious! It would be great for brunch or just a nice breakfast with the kiddos. About my computer...the two people who are supposed to be working on setting it up for me (first they have to LEARN about the new programs, set it up for me specifically and then trouble shoot ALL … Continue reading Salami Frittata

Easy Apple Yogurt Pie / Obuolių pyragas su natūraliu jogurtu
This apple pie looks super easy to throw together and no crust to fuss with! I think that I would use Greek yogurt to add extra protein so I didn’t feel guilty when I ate the whole thing! hahahaha
Seriously, I think that if I woke up tomorrow morning completely healed from ALS I would go from a 5’8″ skeleton to a 5’8″ 600lbs person! lol
Happy baking!
I will admit that apple pies are one of those baked goods that I like to bake the most. Although what not to like about apple pie? Preparation is always super fast, just have apples, flour, eggs, sugar, extra sour cream or yogurt, and voila – a pie is already on the table. Plus, apple pies are always delicious both hot and cold. And if you are lucky and have some remaining ice cream in your freezer, then you can get a fabulous dessert, without much effort and waiting time…
This cake will be loved especially by those who don’t like dry pies, but adore moist and juicy baked goods. You can always use Greek yogurt instead of natural yogurt, or if you want to use sweet yogurt, then add less sugar in a dough.
Enjoy your pie! 😉

Merry Christmas and a Happy New Year!
I introduce you to Bill, another PALS (people living with ALS) and wish you all a Merry Christmas and only the best for the New Year! God bless! xo
On the last day of 2016, I was rushed to the hospital in an ambulance because, even with my breathing mask on, I couldn’t breathe. The doctors diagnosed me with an Upper Respiratory Infection. I didn’t think I would live to see the first day of 2017. I thought the last hours of 2016 would be the last hours of my life.
Obviously, I didn’t die. By God’s grace I lived to see another year. Every day of 2017 has been like a bonus to me, every day God gives me is a bonus. People with ALS are not supposed to live for 21 years. I hope that God will let me hang around for 2018.
I wasn’t planning on posting again this year, but I was sitting here and thought I’d type a short post to wish my blog followers a Merry Christmas and a Happy New Year!

Snowflake Sandwich Cookies with Maple Buttercream Filling + 5 Fun Holiday Cookie Links
I’m reblogging this post not because of the cookie recipe, though they do look absolutely delicious but because of the amazing story at the beginning. It is hauntingly beautiful!
On another note, the Occupational Therapists here at the hospital have finally decided which new computer will work best for me AND have ordered me one! Woohoo! Merry Christmas to me! Hopefully I will have the new computer and blogging away in early January! Yay!
In case I don’t post anything else before Christmas, Merry Christmas everyone! I wish you all the best, good health and love of family and friends! xo
If Tess had known she would think of him as often as she did during her final days she may have made different choices many decades ago. If she knew he would appear in her dreams, nightly, standing in the sunlight on a pathless mountainside under a blue sky while she struggled, step by step, over rocks and snow to reach him…she may have never said hello. And yet so many years ago, she initiated a simple conversation without fully releasing she also made a choice to make a space for this strange man in her mind and heart.
Tess entered his life and he her’s, grateful for a providential connection. She loved this man as she did her husband without ever really, fully knowing him.
[Boundaries remained intact. Years later when middle age became old age, gray hair to white hair, wrinkles abundant, widowed, and often alone, but seldom unhappy…

The Best Sugar Cookies In The World! – By Aunt Paul
Today my Aunt came and decorated my hospital room! Woohoo, it's Christmas in my room! I have the little Christmas tree that my Mom made me before she passed. We are not allowed to plug Christmas lights into the wall - hospital rules - so I found these tiny battery operated star lights that are … Continue reading The Best Sugar Cookies In The World! – By Aunt Paul
Chocolate Dipped Shortbread Cookies
This post is for my Mom who left us much too early. What is cool about this recipe is that it is from a great Mom who cooks and bakes for her beautiful family! I think that’s fitting soooooooo, What’s For Dinner Moms?!
My Mom made me shortbread cookies every Christmas! She always found a pretty round tin container with a decorative lid. She would line it with wax paper and put layers of giant round shortbread cookies that she scored to look like pieces of pie.
Now, if you knew my Mom you would know how HUGE that was! She COULD cook and bake BUT she really didn’t like to. Complete opposite of me! She made those cookies for me only because she knew just how much I loved them! Thanks Mom!
I don’t have her recipe so I thought that another Mom’s recipe would be just as great! I mean, have you seen how beautiful they look? I think crushed candy canes would look super festive!
Enjoy!
‘Tis the season! Cookies, cookies, and more cookies! Today is a perfect day for us to stay in and bake cookies. We have a nice fluffy 3″ of snow on the ground and are expecting at least 6″ during the day. Beautiful day to stay in and watch it snow while we bake.
I am always looking for cookies that are easy to make, taste good, and look great. These cover all three. My daughter made the cookies early one day and later in the evening we dipped them in chocolate. Add sprinkles, nuts, or crushed candy to decorate as you wish.
Verdict:
These were super simple to make and decorate. They have a moist texture that was not dry at all. Store the cookies layered with wax paper in a sealed container for us to 5 days.
Tip: Cut the cookies before you bake them. They will be easier…

Cranberry Orange Quick Bread
Before I talk about this post, I have a question. Does anyone know why I only get emails for some of the sites that I follow but not everyone?
Well, this Quick Bread recipe looks perfect for the season! Can you imagine making french toast with this cranberry orange bread? Delicious!
Mmmmmmm-mmmmmm, I want some! Enjoy!

I’ll be completely honest with y’all: I have no idea what canned cranberry sauce tastes like. I’ve never tried it before in my life. Growing up, I would always see it on the table at Thanksgiving and Christmas but there was something about the mere sight of the stiff sliced rings that was off-putting to me. Why would it be called a ‘sauce’ when it resembled thin beets (which, I’ve never liked)? Plus, back then I thought it made no sense to want to eat something sweet with something as savory as turkey and dressing.
Nowadays I DO think it makes sense to eat cranberry sauce with turkey and dressing–I actually think it’s delicious…just so long as it’s homemade. Ever since I started making my own cranberry sauce it spurred a love for ALL things cranberry, specifically in baking.

I still had some fresh cranberries leftover from Thanksgiving that I…

Santa Claus is Dead?
Here’s a great story that I just had to share! Enjoy…
I first posted this story December 2013. I kinda like it and wanted to share it again. I hope this Holiday was wondrous for everyone and may the New Year be kind to us all!
When Sebastian Phillips finished writing that phrase on his bulletin board he turned around to see what the reaction had been on his students. He was not disappointed. Because this was a first-year philosophy course he expected them to be a little green when it came to abstract ideas. After all they were just kids. Truth be told, Professor N. Sebastian Phillips wasn’t all that much older than his students.
When he looked around the room Sebastian saw surprise, humour and perhaps disbelief, it was also very quiet. Here he was, a college professor talking about a white haired, fat man in a red suit as if he were real. Well real and dead.
