I always loved Swedish Meatballs when I could eat solid food! I don’t know what Ikea is like outside of Canada but here they have a little restaurant in the middle of their maze, a food cart like area after the cashiers and a place where you can buy frozen foods or pantry items.
If you can resist the quick and cheap hotdogs and drink – come on, you know you love them – try their Swedish Meatballs. I was surprised by how good they were! I even bought them from their frozen section.
That was me being lazy! I think that this recipe looks really easy and delicious.
It’s the best one I’ve tried yet- to date. I normally wouldn’t try this with pork, because I’m not a huge pork fan…but I decided to give it a go. I was so shocked at how good it is! I’ll definitely be keeping this recipe.

Yesterday my computer almost bit the dust AND the person this hospital hired to cover the 2 people who normally work with patients who use computers to communicate – so basically their lifeline – KNOWS NOTHING ABOUT COMPUTERS! Wuhaaaaa?! Thankfully, I was able to get my lifeline working with the help of a very patient nurse!

I decided to try and sneak onto the Reader so I could see what the blogs that I follow were up to. After one computer crash and several looooooooong moments hoping that my computer wouldn’t crash again, I found this delicious looking soup recipe! Woohoo!
I think that I would use chicken thighs – because HELLO cheaper! – and add 1 can of chickpeas, drained and rinsed of course. What do you think?

- 1-2 tablespoons oil
- 1 onion- diced
- 4 garlic cloves- rough shredded
- 1 – 1 1/4 lbs. chicken breast diced into cubes (or 2 cans chickpeas, drained)
- 1 teaspoon coriander
- 1 teaspoon dried Mexican oregano (or some bay leaves)
- 1 teaspoon salt
- 2 teaspoon chili powder
- 2 teaspoon cumin
- ⅛ – ¼ teaspoons chipotle powder or cayenne, or to style
- 1 tomato – diced
- 1 tiny can diced green chilies (optional)
- 4 cups chicken stock
- 4 cups water
- 4 ounces dry linguini noodles (or pasta, or gluten-free or rice noodles)
- Juice of 1 lime
- Garnish with avocado slices, recent cilantro, scallions and lime

- In a very massive heavy bottom pot or dutch oven, saute onion in 1-2 T oil over med-high heat for 2 minutes.

About my computer…the two people who are supposed to be working on setting it up for me (first they have to LEARN about the new programs, set it up for me specifically and then trouble shoot ALL of the problems that I find and try to figure out how to fix the problems) are going on vacation for 2 weeks! Soooooooo my new computer that was supposed to be ready for February is hopefully going to be ready in…April? Maybe?!

I’ve heard about and read a number of blogs where they all insist that cauliflower rice is the best thing BUT until Carol posted this, I was not convinced. Carol, I trust YOU so I pass this on to my followers!
My computer…well, it will come when it comes. Now we are trying a different one so I don’t know what to tell you. It’s just not happening as quickly as I was told.

My recipe tried and tested and it’s awesome………. Cauliflower Rice.
And all you need is a Cauliflower and an Onion.
A little Coconut oil to cook or other oil of your choice.
Sea Salt and a squeeze Lemon Juice.
Either grate or blitz in a food processor ( but not too fine) you want some texture.
Heat pan and keep pan HOT as you don’t want Cauliflower to steam and go soggy.
Use Tablespoon Coconut Oil and put in the desired amount of Cauliflower and onion mix.
Cook quickly and then season and add lemon juice.
All in all, it only takes a few minutes to cook….. a bit longer if more than one portion but keep pan hot.
If you wish to vary the taste you can add 1 tsp of Cumin seeds to oil before adding Cauliflower if you are eating…

This soup sounds like one that my Mom would have loved. Mom LOVED hamburgers! And this soup sounds like a hamburger in a bowl!
In other news, my computer, the new one that is, has been delayed. Which means that the return of me writing posts is delayed…
Who doesn’t love a good cheeseburger? It’s about as American as apple pie. Then there’s this soup. It’s warm, creamy, comforting and totally reminiscent of a good cheeseburger. I made this soup for dinner the other night and it was a big hit. Bill didn’t seem overly excited about it until he had a bowl…or two. Needless to say, the whole pot went quickly. I guess he liked it.
What makes this soup so good is the creamy base. It gives the soup it’s heartiness and makes for a very filling dinner. It’s a great soup to make on a cold night. It’s pretty simple to put together and the optional toppings makes it that much more tasty, letting you customize it individually. This was the first time I had made this soup for dinner and it definitely won’t be the last.

I loved me a good meatloaf! What I really like about this recipe is that they use rolled oats instead of bread or breadcrumbs. I was never a fan of ever getting a piece of soggy bread in my mouth. Ewwwwwwwwww!
On my new computer side of things, I have seen the machine twice! Woohoo! The OT’s are working to download the proper programs and then there will be a few weeks of me working with the OT’s to make sure it’s running properly and then I’ll be off and running!

Ultimate comfort food, made safe!
Well, it’s here. The middle of winter in the Midwestern. For those of you not familiar with the Midwestern United States, I’ll explain. At this time of year, there are basically two different types of weather: ridiculously cold and snowy, or sort of cold with dreary, drizzly rain. We’ll have beautiful sunny skies but instant frostbite, or steel grey skies with nonstop misty rain that makes it impossible to dial in your windshield wipers and has everyone self-diagnosing as having Seasonal Affective Disorder. I love the first big snowfall of the season, but after that, winter can just go somewhere else. So in this bleak season when the skies are the color of granite and the cold unrelentingly grips your toes, I feel the need for good comfort food. And in my mind, there are few better comfort foods than meatloaf.

This recipe looks super yummy and ultra easy! You get all of the flavours of cabbage rolls without all the work. Personally, I would use rice rather than cauliflower rice because I would have enjoyed the carbs but that’s up to you.
