Broccoli Salad

This salad is a favorite of mine. I don’t know why I didn’t make it more often because I only ever made it on the holidays. I really should have made it more often because it’s such a simple salad! I didn’t always add the bacon, in fact I rarely did. It does add a nice smokey flavor to the salad but I didn’t like the greasy taste that the bacon added. What I should have done is cook the bacon on a broiler in the oven. If you have ever wondered how restaurants make such great bacon, that is their trick. All restaurants put their bacon in the oven and then drain the excess fats on paper towels. I hope you enjoy!

4 – 5 cups broccoli, bite size pieces

1 cup raisins

1/4 cup red onion, diced

10 strips bacon, cooked and crumbled

1 cup sunflower seeds

Dressing: 3 – 4 Tbsp sugar

1 Tbsp vinegar

1/2 cup light mayo
