I literally have nothing! I have been sick for the last two weeks or so with not one but TWO different infections one after another. And I am tired guys! I don't have my usual good outlook on my life, living with ALS and all. So, instead of passing my poor me attitude onto you … Continue reading I’ve Got Nothing… And Cousin Shawn’s Risotto Recipe

Salami Frittata
This frittata looks delicious! It would be great for brunch or just a nice breakfast with the kiddos.
About my computer…the two people who are supposed to be working on setting it up for me (first they have to LEARN about the new programs, set it up for me specifically and then trouble shoot ALL of the problems that I find and try to figure out how to fix the problems) are going on vacation for 2 weeks! Soooooooo my new computer that was supposed to be ready for February is hopefully going to be ready in…April? Maybe?!
Oh well, happy cooking!
Cheeseburger Soup
This soup sounds like one that my Mom would have loved. Mom LOVED hamburgers! And this soup sounds like a hamburger in a bowl!
In other news, my computer, the new one that is, has been delayed. Which means that the return of me writing posts is delayed…
Sorry!
Happy cooking!
Who doesn’t love a good cheeseburger? It’s about as American as apple pie. Then there’s this soup. It’s warm, creamy, comforting and totally reminiscent of a good cheeseburger. I made this soup for dinner the other night and it was a big hit. Bill didn’t seem overly excited about it until he had a bowl…or two. Needless to say, the whole pot went quickly. I guess he liked it.
What makes this soup so good is the creamy base. It gives the soup it’s heartiness and makes for a very filling dinner. It’s a great soup to make on a cold night. It’s pretty simple to put together and the optional toppings makes it that much more tasty, letting you customize it individually. This was the first time I had made this soup for dinner and it definitely won’t be the last.

Chicken Meatballs
I think that theses chicken meatballs look really easy and delicious! You could make them with ground turkey (Alison) if you prefer.
If you don’t have any string cheese sticks, you can omit it or use other cheese. Mozzarella would be nice!
Happy cooking!
I’ve had an emotional day. I can’t tell you exactly why, but I’m pretty sure it has a lot to do with my hashimotos disease. Sometimes I’m super grumpy and I cry or get angry for no reason at all. For whatever reason cooking makes me feel better. Why shouldn’t I go ahead and make some lunches for the little munchkin? I always like to have food that is processed as little as I possibly can. I really hate to send things that are unhealthy. I have a really hard time not giving him as much healthy food as I can. I guess this stems from my fear that my own health problems might be given to him. We live in a country where most of our residents are insulin resistant and a lot are starting to show signs of having things like hashimoto’s and grave’s disease. This isn’t something that I want for Cooper. I…

Chicken Carbonara Linguini
There is nothing more comforting than a big bowl of cheesy, yummy pasta! I loved a big fat ol' bowl of Carbonara. It's just so creamy - without the fat of cream - and bacon-y (okay I know that is not a word but for now, it is lol) and just feels like a hug … Continue reading Chicken Carbonara Linguini
Home-Made Mac & Cheese
Before I start this post, I would like to apologize for my last post. I had something dumped on my shoulders and I really did not deal with it well. I should NOT of passed it onto you. It will not happen again. Promise! Did anyone else grow up living on KD? Maybe it's just … Continue reading Home-Made Mac & Cheese

Aunt Paul’s Stuffed Jumbo Pasta Shells
This recipe was inspired first, by a recipe that I had found on the AllRecipes site (I'll provide the link at the end) and secondly by a recipe on the back of the Italpasta jumbo shells package. You see, I had emailed the Allrecipe one to my family awhile back and it was a huge … Continue reading Aunt Paul’s Stuffed Jumbo Pasta Shells
