Crock Pot Cabbage Roll Stew

This recipe looks super yummy and ultra easy! You get all of the flavours of cabbage rolls without all the work. Personally, I would use rice rather than cauliflower rice because I would have enjoyed the carbs but that’s up to you.

Cabbage rolls tend to be a popular dish found in the Balkans, Central, Northern, and Eastern Europe and some places in Western Asia, Iran, and North Africa. Though, when we think of cabbage rolls here in the United States, most often those rolls come from Polish and Jewish Eastern European influences and they tend to be popular in many different communities.

Chicken Meatballs

I think that theses chicken meatballs look really easy and delicious! You could make them with ground turkey (Alison) if you prefer.
If you don’t have any string cheese sticks, you can omit it or use other cheese. Mozzarella would be nice!

I can’t tell you exactly why, but I’m pretty sure it has a lot to do with my hashimotos disease. Sometimes I’m super grumpy and I cry or get angry for no reason at all. For whatever reason cooking makes me feel better. Why shouldn’t I go ahead and make some lunches for the little munchkin? I always like to have food that is processed as little as I possibly can. Easy Oven Fajitas (small)

I’ve said it before (in my world-famous fire-roasted salsa post): I love Mexican food. Specifically Tex-Mex, actually. Tacos, chimichangas, enchiladas… Despite being a born-and-raised Indiana boy, this is some of the best comfort food I can think of. I have noticed that every time we go to a Mexican restaurant, when the server walks through the dining room with the sizzling cast iron skillet of fajitas, every head turns and watches them go by, most saying, “ooooh, that looks good.”

With small kids in the house, a sizzling cast iron skillet isn’t always the wisest choice. So we find another way. These fajitas are simple and made in the oven, but will definitely pass the test.

Here we are at the end of 2017, and I feel like this year just flew by. My cooking and baking schedule for December is almost always hectic as I’m busy putting together recipes and posts for the 12 Days of Christmas series I do every year on the blog. On the last day of 2016, I was rushed to the hospital in an ambulance because, even with my breathing mask on, I couldn’t breathe. The doctors diagnosed me with an Upper Respiratory Infection. I didn’t think I would live to see the first day of 2017. I thought the last hours of 2016 would be the last hours of my life.

Obviously, I didn’t die. By God’s grace I lived to see another year. Every day of 2017 has been like a bonus to me, every day God gives me is a bonus. People with ALS are not supposed to live for 21 years. I hope that God will let me hang around for 2018.

I wasn’t planning on posting again this year, but I was sitting here and thought I’d type a short post to wish my blog followers a Merry Christmas and a Happy New Year!

Chocolate Dipped Shortbread Cookies

This post is for my Mom who left us much too early. What is cool about this recipe is that it is from a great Mom who cooks and bakes for her beautiful family! I think that’s fitting soooooooo, What’s For Dinner Moms?!
My Mom made me shortbread cookies every Christmas! She always found a pretty round tin container with a decorative lid. She would line it with wax paper and put layers of giant round shortbread cookies that she scored to look like pieces of pie.
Now, if you knew my Mom you would know how HUGE that was! She COULD cook and bake BUT she really didn’t like to. Complete opposite of me! She made those cookies for me only because she knew just how much I loved them! Thanks Mom!
I don’t have her recipe so I thought that another Mom’s recipe would be just as great! I mean, have you seen how beautiful they look? I think crushed candy canes would look super festive!

‘Tis the season! Cookies, cookies, and more cookies! Today is a perfect day for us to stay in and bake cookies. We have a nice fluffy 3″ of snow on the ground and are expecting at least 6″ during the day. Beautiful day to stay in and watch it snow while we bake.

I am always looking for cookies that are easy to make, taste good, and look great. These cover all three. My daughter made the cookies early one day and later in the evening we dipped them in chocolate. Add sprinkles, nuts, or crushed candy to decorate as you wish.

Verdict:

These were super simple to make and decorate. They have a moist texture that was not dry at all. Store the cookies layered with wax paper in a sealed container for us to 5 days.

Tip: Cut the cookies before you bake them. They will be easier…
