Italian Sausage Penne

I have been hmmm-ing and uhhhh-ing over which recipe to post next. While my mind has been stumbling through my recipes, I’ve been organizing my blog to make it easier for you to find my recipes. I have added a Recipes button to the Menu bar complete with sub-categories like Main Dishes, Appetizers, Cookies ect. I’m still working on it but it should be done soon!

This recipe is something that I have promised my cuz Alison I would post. I liked making this pasta dish with hot Italian sausages but mild would be lovely as well. I also mainly used canned diced tomatoes but you can also use fresh from your garden – yum! – or if you have a picky child who doesn’t like chunks of tomato (Matthew), you can of course use a can or two of tomato sauce.

This week one of the grocery stores had a HUGE case of Roma tomatoes on sale for $6.88! Roma or Plum tomatoes are my favourite for pasta dishes. I would dunk them in boiling water to peel and core the tomatoes before chopping them up and throwing them in the pan. Sooooooo good!

Ingredients

  • 4 – 6 Italian sausages, hot or mild cut into bite sized rounds
  • 2 cans of diced tomatoes
  • 2 Tbsp. of tomato paste
  • 1 small sweet onion, cut into thin slices
  • 2 – 3 cloves of garlic, minced
  • 2 sweet peppers, cut into thin slices (I liked using red and orange)
  • 1 tsp. of dried basil
  • 2 tsp. of dried oregano
  • salt and pepper, to taste
  • Parmigiano Reggiano cheese, for topping
  • I almost forgot 1 box of penne (or your prefered pasta)

Instructions

  1. Bring a large pot of water to a boil. Once boiling, heavily salt water and add pasta. Cook until el dente ~6 – 8 minutes. Drain and reserveĀ  a cup of starchy water.
  2. While pasta cooks, heat a large, deep skillet over medium high heat. Add 2 Tbsp. of olive oil and cut sausages to skillet. Sautee until almost cooked through, ~4 minutes.
  3. Lower heat to medium and add 1 Tbsp. olive oil, onion and garlic. Cook until fragrant , ~2 minutes. Add tomatoes, tomato paste, peppers, basil, oregano, salt and pepper. Let simmer uncovered for ~ 10 minutes. Add pasta and toss to combine. Add parm. If sauce is too thick, thin with starchy water.
  4. Serve with extra parm, garlic bread and a nice salad!

  1. Yeahhhhhhh!!!!!! Saw the title, went to do a lil dance, came back n read it and noted that you gave me a shout out – thank you!!!! I have all ingredients and will do on weekend to prep for school lunch – Holly likes pasta for lunch!
    Ummmm lil cuz … I’d like to make a request to share nanny’ sugar pie (tarte au sucre) and tortiaire … I think it translates as meat pie – I need to learn how to make these as well as mom n aunt Lou’s relish xox I have no clue where they stashed these secrets!!!!

      • I don’t understand the chunks thing though. Does he not eat tomatoes in salads or sandwiches? Kids are funny with their logic! When I was a kid, I HATED breakfast sausages! Now I would probably do many evil deeds to eat them! lol

    • Funny, I was looking for Mom’s relish recipe the other day but I couldn’t find it! I’ll have to ask Michelle since she has everything now. I have the tortiare and hawthorne jelly recipe but not the sugar pie. Mmmmmmm, sugar pie!
