I have a confession about this recipe. I have never had this cake because, HELLO – mayo in my cake! I mean – EWWWWWW! Right? Apparently I’m wrong about that because this cake is my cousin Shawn’s favourite. Plus, my Aunt Paul says that she has had it and it’s really moist and tasty. Let’s face it, my cousin Shawn saying it’s good – could be a gamble with my health, my Aunt saying that it is good – I’m baking myself a chocolate mayo cake! lol
Today, in the spirit of my other cousin Alison’s birthday, I give you cake! Well, not literally because I really can’t reach through the internet and give you a piece of cake but you know what I mean. Let me know how they turn out and, I mean really, is it really yummy?! lol
Ingredients
- 2 cups of all-purpose flour
- 2/3 cup of unsweetened cocoa powder
- 1 1/4 tsp. of baking soda
- 1/4 tsp. of baking powder
- 3 eggs
- 1 2/3 cups of sugar
- 1 tsp. of vanilla extract
- 1 cup of mayo
- 1 1/3 cups of water
Directions
- Preheat oven to 350°F. Grease and lightly flour two 9-inch round cake pans; set aside.
- Combine flour, cocoa, baking soda and baking powder in medium bowl; set aside.
- Beat eggs, sugar and vanilla in large bowl with electric mixer at high-speed until light and fluffy, about 3 minutes. Beat in mayo at low-speed until blended. Alternately beat in flour mixture with water, beginning and ending with flour mixture. Pour into prepared pans.
- Bake 30 minutes or until toothpick inserted in centers comes out clean. Cool 10 minutes on wire racks; remove from pans and cool completely.
- Frost with your favourite frosting or generously sprinkle with confectioners sugar.

Many thanks for the kind bday wishes my sista’s. I am so amazed by this mayo in the cake business- Lynn, I did not find the mayo – Lisa has access to a live camera in the house … and she remembers how much mayo she got me … so she knew exactly where it was lolol

Surprisingly mayo goes well with so many odd things. I put mayo on top of cottage cheese and a sliced pineapple circle.

Hmm. I’m actually picky with my mayo haha. I buy mine from Trader Joes, but forgot the name of it. I just know that it has apple cider vinegar in it, which I like. I haven’t seen any other mayo’s with apple cider vinegar. It’s very good for the stomach!

Kids… you can’t actually TASTE the mayo in the cake it just makes it super-duper moist. My mom (AKA Aunt Sue) is a pretty amazing cook/baker plus I didnt get to be 35lbs overweight by looking at cake; I sample A LOT.
Little cuz Lisa: I made an Apple Crisp to die for this past weekend to go along with the ribs I slow cooked on my Big Green Egg (finished with 30 minutes of smoke!) – I’m sure you’ve seen past pics on my Facebook (Book of Face) account. I’ve become a pretty accomplished BBQ’er. In terms of other meats, check out Sous-Vide cooking when you get a chance. I’ve been working with that lately (I have an Anova sous-vide appliance).
Most of my grocery shopping is either done at the local butchers or at Metro. I’m kinda lazy and will just go to the closest store to me. By the way, I buy Loto-Max every week – when I win you’re moving into a new house with me. You’ll have the best care ever! and when I do win (and I will) you can tell those ragamuffins at St-Vincent to SUCK IT. Or use Chevy Chase’s famous words from Christmas Vacation: those “heap, lying, no-good, rotten, four-flushing, low-life, snake-licking, dirt-eating, inbred, overstuffed, ignorant, blood-sucking, dog-kissing, brainless, dickless, hopeless, heartless, fat-ass, bug-eyed, stiff-legged, spotty-lipped, worm-headed sack of monkey shit he is! Hallelujah! Holy shit! Where’s the Tylenol?”
