Classic Potato Salad

This recipe was inspired by the lazy summer days of my youth. The kind of weekends where everyone got together for a barbecue. Slices of watermelon, hotdogs and hamburgers! There were always a big selection of sides too! Pasta salads, potato salads, green salads and fresh fruits. Someone always brought one of those weird jello salads with fruit in it. I stayed clear of those kinds of things because as a kid, I was sure that it had been beamed down from outer space! Yeah, I was a little imaginative! lol

For me, it was always my Dad who was in charge of the potato salad. Not the pasta or green salads. Never the coleslaw. Those were women foods, never to be prepared by the hands of men. I think it’s the whole men and their love of meat and potatoes thing. Okay, I’m aging myself again because that’s not the case with the new generations. But it was…

This potato salad is simple with a simple mayonnaise dressing. Growing up it was always Miracle Whip but as I got older, I preferred Hellman’s. And when my dad would make it, he would use Russet potatoes, peel, cube and chop them. Then he would dump them all in a huge pot of water and boil the crap out of those babies! I prefer red potatoes. I simply would wash, cube and steam them with the skin on. It’s going to be your salad so you choose what you use and how they’re cooked.

Ingredients

  • 5 lbs of potatoes, cooked and cubed (you decide what kind)
  • 1 – 2 yellow onions, diced
  • 3 celery stalks, diced thinly
  • 6 hard-boiled eggs, chopped
  • 2 – 3 green onions, diced
  • 2 cups of mayo
  • 1 – 2 Tbsp. of mustard (my Dad used yellow but I like Dijon)
  • salt and pepper, to taste

Instructions

  1. In a small bowl combine mayo, mustard, salt and pepper. Mix well and set aside.
  2. In a large bowl combine potatoes, eggs, onions, green onions and celery. Pour dressing over everything and toss to combine.
  3. Cover with plastic wrap or lid and place in the fridge for at least 1 hour or up to overnight.

I hope you enjoy playing with this classic recipe! As I said earlier, I evolved this from your typical “Dad’s” recipe by using red skinned potatoes that I steamed. I also substituted 1 cup of mayo for plain greek yogurt. I liked adding some sweet smoked paprika.

  1. OMG you too!!??!!! Those jello things were terrifying! Yer ma fed my kids jello for the first time at the hospital…. you may recall her coming down the hall just to tell you they’d never had jello before lolo – anyhow, potato salad is another story- LOVE IT! I’m with you Lisa on the miracle whip switch … I might have been 35 when I discovered real mayo lolo yum! Awesome recipe – thank you!
